Topinambur pita bread

100 g of topinambur chips

400 g of flour

100 g of milk

2 eggs

½ teaspoonful of salt
Dissolve the yeast in warm milk, add a cup of flour, stir in thoroughly the beaten eggs until a smooth homogeneous mass, and leave in a warm place for 2.5 hours. Meanwhile, boil topinambur chips for about 8 min. After the dough has risen, fold the drained chips in it, then add the remaining part of the flour and salt. Knead the dough continuously, place in a pan and bake at 200 ºC.
