Topinambur omelette

100 g of topinambur chips

80 g of butter

3-4 onions or a bunch of spring onions
2 peppers
5 eggs
½ teaspoonful of garlic powder and ½ teaspoonful of savory salt; salt to taste
Boil topinambur chips for about 8 min. Cut the onions and peppers, add the seasonings, eggs and drained topinambur, mix and stew in butter in a lidded pot.
